Base of this recipe is A rice pudding
1.5L of whole milk
175g Dessert rice
90g Sugar
1 vanilla pod
Bring milk & vanilla to the boil
Add the rice
When it starts to thicken add sugar
Cook until one spoon of milk left
Let it cool down
Preheat your oven @170 degrees
Gâteau de Riz
Ingredients
Rice pudding
2 whole eggs + 2 yolks
50g unsalted butter cut in small pieces
Caramel
150gr Sugar
A spoon of water
Bring to the boil. Set in a mold and let it cool down.
Add the butter progressively to the rice pudding
Add the egg mix
Mix gently not to break the rice grains.
Add this mix on the caramel
Add boiling water to create a Bain Marie
Bake for 30min @170 degrees
Cool down then store in fridge overnight.
Can be eaten lukewarm as well if lacking of patience;)
